Fantastic Sourdough Waffles!

My friends are exasperated with me…they want some sourdough bread. I keep making pancakes and waffles :-)  
 
I have one batch of sourdough starter in the freezer and one bubbling away on top of the freezer. I am totally addicted to the smell of sourdough throughout my apartment! I am also addicted to dipping my finger in the starter for  a taste here and there.  Who would have thought flour, milk and sugar that haven’t been cooked by heat can be sooooooo good!?! A round of applause for the wild yeast beasties! Mmmmmmmm……
 
This time I made waffles. I ate two and put 8 in the freezer. 
 
Sourdough Waffles
 
2 cups sourdough starter
2 eggs
1/4 cup milk
2 tsp pumpkin pie spice
glug of vanilla
1 tsp baking soda
1/2 tsp salt
2 Tbsp sorghum (or something else sweet) 
3 Tbsp oil
 
Spray waffle iron with non-stick spray. Be conservative when you add this to the waffle iron….it expands like crazy! Serve with butter and syrup.

    SO FREAKING GOOD. I made mine gluten free and replaced the milk with an extra egg. Also added a little xanthan gum and threw in a spoonful of honey for sweetness. Made my morning. Thank you!
