The world is 10 weeks from running out of wheat! The lowest inventory in 50 years!!!
I would like to include my response. I hope it will be helpful. Remember, SimplyLivingSmart is not about doom and gloom. That is not our method. Remember, hope, planning, and preparation.
The statement “10 weeks from running out of wheat!” is a scare tactic, but the situation is critical, and we do have the lowest inventory in 50 years. That IS accurate.
What is not accurate, is 10 weeks from running out. Most major bakeries store more than a year of wheat so they can ride through inevitable ups and downs in the market. Nevertheless, new wheat is extremely short. There are several reasons.
Oh, first a side note. Last year average price per bushel was $3.75. The price in your email is accurate.
Your price for wheat is going up, but not so rapidly . . . yet. You can still get wheat at warehouses such as Walton Feed, GrandmasCountry.com, HoneyvilleGrain.com, and several others at around $14-16 per 50 lb bag. Last year it was around $10.00. This is still significant, but not like the per bushel 600-700% price increase in one year.
In-store bread price will likely continue to escalate, probably a few months or a year behind.
We don’t have a solution to the grain problem because there is a serious “wheat rust” disease problem in the Eastern countries, so their production is being cut back uncontrollably. Our farmers have been putting a tremendous amount of farm acreage into biofuels to fight the oil problem. Between the two, wheat is being hit very hard.

Applesauce and Carrot Muffins (Makes 12 muffins)
This week’s video showed how to make bulgar wheat. This is a great addition to many recipes. Here’s a delicious example.
1/2 cup hot water
1/2 cup raisins
1 cup all-purpose flour
3/4 cups whole-wheat flour
1 tsp. baking soda
1/2 tsp. salt
1 1/2 tsp. cinnamon
1/2 tsp. nutmeg
1/3 cup vegetable oil
1 egg
1/2 cup sugar
1/2 tsp. vanilla
1/4 tsp. lemon extract
1 cup applesauce
3/4 cup grated carrots
Preheat oven to 400 degrees.
Pour hot water over raisins and let soak. Stir together flours, soda, salt and spices in a large bowl. In small bowl, using an electric mixer, beat egg and sugar until fluffy. Beat in oil, vanilla, and lemon extracts and stir in applesauce. Add to flour mixture and stir just until blended. Fold in grated carrots and raisins (with water). Spoon into greased or paper-lined juffin tins. Bake for 15-18 minutes until lightly brown and a toothpick inserted into muffin comes out clean.
